- 16 all-beef hot dogs
- 26 hot dog buns, toasted
- 31 lb 80/20 ground beef
- 41 small onion, finely diced
- 52 cloves garlic, minced
- 61 tablespoon chili powder
- 71 teaspoon cumin
- 8½ teaspoon smoked paprika
- 9½ teaspoon garlic powder
- 101 can (8 oz) tomato sauce
- 111 tablespoon Worcestershire sauce
- 12Salt and black pepper to taste
- 13Sharp cheddar cheese, shredded
- 14Diced white onion and yellow mustard for serving

Brown ground beef in a skillet over medium-high heat, breaking it into very fine crumbles — chili dog meat should be fine-textured, not chunky. Add diced onion and cook 3 minutes. Add garlic, chili powder, cumin, paprika, and garlic powder; cook 1–2 minutes until fragrant.

Stir in tomato sauce and Worcestershire; simmer over medium-low heat 10–12 minutes, stirring occasionally, until the chili is thick, deeply flavored, and no longer watery. Season with salt and pepper.

Cook hot dogs in a pan with a splash of water over medium heat, turning, until plump and lightly browned, about 5 minutes. Place in toasted buns. Spoon a generous amount of warm chili over each hot dog. Top with shredded cheddar, diced white onion, and a stripe of yellow mustard.
