- 2½ cup mango nectar or fresh mango, pureed
- 33 tablespoons fresh lime juice
- 42 tablespoons olive oil
- 52 tablespoons honey
- 61 tablespoon chili powder
- 71 teaspoon cumin
- 81 teaspoon garlic powder
- 9½ teaspoon smoked paprika
- 10¼ teaspoon cayenne
- 11Salt and black pepper to taste

Whisk mango nectar, lime juice, olive oil, honey, chili powder, cumin, garlic powder, paprika, cayenne, salt, and pepper into a marinade. Add chicken pieces and toss to coat. Marinate at least 20 minutes at room temperature or refrigerate up to 8 hours.

Preheat grill to medium-high heat (400–425°F). Thread marinated chicken onto skewers, leaving a small gap between pieces for even cooking. Reserve the marinade.

Grill skewers 5–6 minutes per side, brushing with reserved marinade in the last 2 minutes, until lightly charred, slightly caramelized, and an instant-read thermometer reads 165°F. Rest 3 minutes. Serve over rice or in lettuce wraps, garnished with fresh cilantro, lime wedges, and mango salsa.
