- 14 Italian sausage links (sweet or hot)
- 22 red bell peppers, sliced
- 32 green bell peppers, sliced
- 41 large yellow onion, sliced
- 54 cloves garlic, sliced
- 62 tablespoons olive oil
- 71 teaspoon Italian seasoning
- 8½ teaspoon red pepper flakes
- 9Salt and black pepper to taste
- 104 hoagie rolls, split and toasted
- 11Provolone cheese slices
- 12Yellow mustard or hot sauce for serving

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Score sausage links on one side (3–4 diagonal cuts) so they lie flat and cook evenly. Cook sausages 4–5 minutes per side until deeply browned and cooked through to 160°F. Remove and slice on the bias.

Add remaining olive oil to the same skillet. Add bell peppers and onion; cook over high heat without stirring for 2–3 minutes until the edges char. Toss and cook 4–5 more minutes until tender and caramelized. Add garlic, Italian seasoning, red pepper flakes, salt, and pepper; cook 1 more minute.

Return sliced sausage to the pan and toss with the peppers and onions. Lay provolone slices over the top, cover the pan, and let the cheese melt 1–2 minutes. Scoop the sausage and pepper mixture into toasted hoagie rolls. Serve with mustard or hot sauce.
