Dip the florets from 1 large head of cauliflower into the batter, letting any excess drip off, and arrange them in a single layer on the prepared baking sheet. This will ensure they cook evenly and become crispy.

Bake at 450°F (232°C) for 20 minutes until the batter is set and light golden. While the cauliflower bakes, prepare the buffalo sauce by whisking together ½ cup Frank's Red Hot sauce, 3 tablespoons melted unsalted butter, and 1 tablespoon honey in a separate bowl.

Remove the cauliflower from the oven and toss it in the buffalo sauce until every piece is well coated. Return the coated cauliflower to the baking sheet and bake for an additional 8–10 minutes until the sauce is caramelized and the edges are beginning to char and crisp.
