- 11 bunch asparagus (about 1 lb), tough ends snapped off
- 22 tablespoons olive oil
- 33 cloves garlic, minced
- 4½ teaspoon salt
- 5¼ teaspoon black pepper
- 6¼ teaspoon red pepper flakes
- 72 tablespoons fresh lemon juice
- 81 teaspoon fresh lemon zest
- 92 tablespoons Parmesan, shaved
- 10Flaky sea salt for finishing
Instructions
- 1
Preheat the grill to high at 450°F (232°C). While the grill heats, toss 1 bunch of asparagus (about 1 lb) with 2 tablespoons of olive oil, 3 cloves of minced garlic, ½ teaspoon of salt, ¼ teaspoon of black pepper, and ¼ teaspoon of red pepper flakes until evenly coated.
- 2
Once the grill is hot, place the asparagus perpendicular to the grill grates or use a grill basket to prevent them from falling through. Grill for 4–6 minutes for thin spears or 6–8 minutes for thick spears, rolling them with tongs every 2 minutes, until they are bright green with char marks and tender when pierced with a knife tip but still slightly firm at the center.
- 3
While the asparagus is grilling, prepare the finishing touches. In a small bowl, combine 2 tablespoons of fresh lemon juice and 1 teaspoon of fresh lemon zest.
- 4
Once the asparagus is done, transfer it immediately to a serving plate. Squeeze the lemon juice mixture over the top and sprinkle with 2 tablespoons of shaved Parmesan and a pinch of flaky sea salt for added flavor.
- 5
Serve the grilled asparagus within 5 minutes while still hot to enjoy the best texture and flavor.
