- 112 strips thick-cut bacon
- 23 tablespoons pure maple syrup
- 31 tablespoon brown sugar
- 4½ teaspoon black pepper
- 5¼ teaspoon cayenne pepper

Preheat your oven to 400°F (204°C). Line a rimmed baking sheet with foil and set a wire rack over the top. Arrange 12 strips of thick-cut bacon in a single layer on the rack without overlapping.

In a small bowl, mix together 3 tablespoons pure maple syrup, 1 tablespoon brown sugar, ½ teaspoon black pepper, and ¼ teaspoon cayenne pepper until well combined.

Brush the top of each bacon strip generously with the maple glaze. Bake in the preheated oven for 15 minutes.

After 15 minutes, brush the bacon with another coat of glaze and continue to bake for an additional 5–8 minutes until the bacon is deep mahogany brown and caramelized. Keep a close eye on it, as the sugar can burn quickly.

Once done, remove the bacon from the oven and let it cool on the rack for 5 minutes. The glaze will harden into a lacquered coating as it cools.
