- 11½ lbs sirloin steak, cut into 1-inch cubes
- 24 tablespoons unsalted butter
- 35 cloves garlic, minced
- 42 tablespoons olive oil
- 51 teaspoon smoked paprika
- 61 teaspoon onion powder
- 7½ teaspoon crushed red pepper flakes

Pat 1½ lbs sirloin steak cubes completely dry with paper towels — moisture is the enemy of a good sear. Season generously with salt, black pepper, 1 teaspoon smoked paprika, and 1 teaspoon onion powder.

Heat 2 tablespoons olive oil in a large cast-iron skillet over high heat until it begins to smoke, about 2-3 minutes.

Add the steak bites in a single layer without crowding. Cook without moving for 1–2 minutes until a dark crust forms, then toss and cook for an additional 1 minute for medium-rare or 2 minutes for medium.

Reduce the heat to medium. Add 4 tablespoons unsalted butter, 5 cloves minced garlic, and ½ teaspoon crushed red pepper flakes to the skillet. Tilt the pan and baste the steak bites continuously with the foaming garlic butter for 60 seconds until they are coated and fragrant.

Transfer the steak bites immediately to a plate — carryover cooking will finish them. Scatter 2 tablespoons chopped fresh parsley over the top.
