- 51¾ cups whole milk
- 62 large eggs, separated
- 7½ cup unsalted butter, melted
- 81 teaspoon pure vanilla extract

Whisk flour, sugar, baking powder, and salt in a large bowl. In a separate bowl, whisk milk, egg yolks, melted butter, and vanilla together. Stir into the flour mixture until just smooth — a few small lumps are fine.

In a clean, grease-free bowl, beat egg whites with an electric mixer on medium-high speed until stiff, glossy peaks form, about 2–3 minutes. Gently fold egg whites into the batter in two additions, using broad strokes to keep them as airy as possible — streaks of white are fine.

Preheat a Belgian waffle iron and coat generously with cooking spray. Pour in enough batter to fill the iron (about ¾ cup, depending on iron size). Close and cook 4–5 minutes until the waffle is deeply golden and lifts easily from the iron without tearing. Repeat with remaining batter. Serve immediately while crisp.
