- 18 thick slices brioche bread (1-inch thick)
- 23 large eggs
- 3½ cup whole milk
- 4¼ cup heavy cream
- 52 tablespoons maple syrup, plus more for serving
- 61 teaspoon pure vanilla extract
- 71 teaspoon cinnamon
- 8¼ teaspoon freshly grated nutmeg
- 92 tablespoons unsalted butter

Whisk eggs, milk, heavy cream, maple syrup, vanilla, cinnamon, and nutmeg together in a wide shallow bowl until fully combined and slightly frothy. Soak brioche slices for 30 seconds per side, pressing gently so the custard penetrates the bread without making it soggy.

Melt 1 tablespoon butter in a large non-stick skillet or griddle over medium heat until foaming subsides. Add soaked bread slices (work in batches, adding more butter as needed) and cook 3–4 minutes per side until deeply golden brown and the custard is set all the way through. Adjust heat if browning too quickly.
