- 12 lbs 80/20 ground beef
- 21 cup plain breadcrumbs
- 3½ cup whole milk
- 42 large eggs, lightly beaten
- 51 medium yellow onion, finely diced
- 63 cloves garlic, minced
- 72 tablespoons Worcestershire sauce
- 81 teaspoon smoked paprika
- 91 teaspoon dried thyme
- 10Salt and black pepper to taste
- 11½ cup ketchup
- 122 tablespoons brown sugar
- 131 tablespoon apple cider vinegar

Preheat oven to 350°F. In a small bowl, combine breadcrumbs and milk; let soak 5 minutes until a panade forms. In a large bowl, gently mix ground beef, panade, eggs, onion, garlic, Worcestershire sauce, paprika, thyme, 1 teaspoon salt, and ½ teaspoon black pepper until just combined — do not overwork or the loaf will be dense.

Turn mixture onto a rimmed baking sheet lined with foil. Shape into a 10×4-inch loaf, about 2 inches tall. Whisk together ketchup, brown sugar, and vinegar; spread half over the loaf.

Bake at 350°F for 45 minutes. Spread remaining glaze over the top and bake another 15–20 minutes until an instant-read thermometer inserted in the center reads 160°F and the glaze is caramelized and sticky. Rest 10 minutes before slicing.
