- 12 cups green papaya, shredded
- 26 cherry tomatoes, halved
- 31/4 cup long beans or green beans, cut into 1-inch pieces
- 42 cloves garlic
- 52-4 Thai bird's eye chilies
- 62 tbsp dried shrimp
- 72 tbsp roasted peanuts
- 82 tbsp fish sauce
- 92 tbsp lime juice
- 101 tbsp palm sugar
- 11Sticky rice for serving

In a large mortar and pestle, pound garlic and chilies into a rough paste.

Add long beans and lightly bruise them with the pestle.

Add dried shrimp and peanuts, pound lightly to crush.

Add shredded green papaya. Pound and toss (don't mash) — use a spoon in the other hand to toss ingredients.

Add fish sauce, lime juice, and palm sugar. Toss and pound gently.

Add tomatoes last, bruise them slightly to release juices.

Taste and adjust: it should be sour, salty, spicy, and sweet in balance. Serve immediately with sticky rice.
