- 11 lb pork ribs, cut into pieces
- 22 medium tomatoes, quartered
- 31 large onion, quartered
- 41 daikon radish, sliced
- 52 cups kangkong (water spinach) or regular spinach
- 61 long green pepper
- 72 tbsp tamarind paste (or 1 packet sinigang mix)
- 86 cups water
- 92 tbsp fish sauce
- 10Salt to taste

Bring water to a boil. Add pork ribs and boil for 5 minutes, skimming any scum from the surface.

Add onion and tomatoes. Simmer for 25 minutes until pork is tender.

Add daikon radish and green pepper. Cook 5 minutes until radish is translucent.

Add tamarind paste and fish sauce. Stir to dissolve.

Add kangkong/spinach in the last minute — it wilts almost instantly.

Taste the broth — it should be deeply sour and savory. Adjust tamarind and fish sauce.
