- 22 tbsp olive oil
- 31 large onion, diced
- 42 cloves garlic, minced
- 51 tsp harissa paste
- 61 can (28 oz) crushed tomatoes
- 71 tsp cumin
- 81 tsp smoked paprika
- 91/2 cup crumbled feta cheese
- 10Fresh cilantro and parsley
- 11Crusty bread for serving

Heat olive oil in a large skillet. Sauté onion until soft, 5 minutes. Add garlic, cook 1 minute.

Add harissa, cumin, and smoked paprika. Stir 30 seconds.

Pour in crushed tomatoes. Season with salt and pepper. Simmer 10 minutes.

Make 6 wells in the sauce. Crack an egg into each well.

Scatter crumbled feta around the eggs.

Cover and cook on medium-low for 6-7 minutes until whites are set but yolks still runny.
