- 11.5 lbs chicken thighs, cubed
- 210 oz fresh spinach
- 34 oz mustard greens (or more spinach)
- 42 tbsp ghee
- 51 large onion, diced
- 63 cloves garlic, minced
- 71 inch ginger, grated
- 82 green chilies
- 91 tsp cumin seeds
- 101 tsp garam masala
- 111/2 tsp turmeric
- 123 tbsp heavy cream

Blanch spinach and mustard greens in boiling water for 2 minutes. Transfer to ice water, drain, and blend into a rough puree.

Heat ghee in a pan. Add cumin seeds, let splutter. Add onion and cook until golden, 6 minutes.

Add garlic, ginger, green chilies. Cook 1 minute. Add turmeric, stir.

Add chicken cubes and cook on high heat for 5 minutes until browned.

Add the greens puree. Stir well, cover, and simmer for 20 minutes until chicken is cooked through.

Stir in cream and garam masala. Season with salt.

Serve hot with makki di roti (cornbread) or steamed rice.
