- 12 lbs flank steak
- 21 can (14 oz) crushed tomatoes
- 31 large onion, sliced
- 41 green bell pepper, sliced
- 51 red bell pepper, sliced
- 64 cloves garlic, minced
- 71 cup beef broth
- 81/4 cup green olives
- 92 tbsp capers
- 102 tbsp olive oil
- 111 tsp cumin
- 121 tsp oregano
- 131 bay leaf
- 14Salt and pepper to taste
- 15White rice and black beans for serving

Place flank steak in a pot, cover with water. Boil for 60-90 minutes until very tender. Remove and shred into thin strands with two forks.

Heat olive oil in a large pan. Sauté onion and bell peppers until soft, about 6 minutes.

Add garlic, cumin, and oregano. Cook 1 minute.

Add crushed tomatoes, beef broth, and bay leaf. Simmer 5 minutes.

Add shredded beef, olives, and capers. Stir well.

Cover and simmer on low for 20-30 minutes until all flavors meld and sauce thickens.

Serve over white rice with black beans on the side. Ropa vieja means 'old clothes' — the shredded meat looks like torn fabric.
