Patacones (Fried Green Plantains)

- 13 green plantains, peeled
- 2Vegetable oil for frying
- 3Salt to taste
- 4Lime juice
- 5Hogao sauce: 1 diced tomato, 1 diced onion, 2 cloves garlic, 1 tbsp oil, cumin, salt

Cut plantains into 1.5-inch thick rounds.

Heat oil to 325°F. Fry plantain rounds for 3-4 minutes until slightly golden but still soft. Remove.

Using a tostonera (plantain press) or the bottom of a glass, smash each round flat to about 1/3 inch thick.

Return flattened plantains to 375°F oil. Fry for 2-3 minutes until golden and crispy.

Drain on paper towels and season immediately with salt and lime juice.

For hogao: Sauté onion until soft, add garlic and tomato, cook until jammy. Season with cumin and salt.

Serve patacones topped with hogao, or alongside guacamole, cheese, or ceviche.
