- 11 lb tubular pasta (penne or bucatini)
- 21 lb ground beef or lamb
- 31 large onion, diced
- 42 cloves garlic, minced
- 51 can (14 oz) crushed tomatoes
- 61/2 cup red wine
- 71 tsp cinnamon
- 81/4 tsp nutmeg
- 93 tbsp butter
- 103 tbsp flour
- 112.5 cups milk
- 122 egg yolks
- 131/2 cup Parmesan, grated

Cook pasta until al dente. Drain and toss with a little butter.

Brown ground meat with onion and garlic. Add tomatoes, wine, cinnamon, nutmeg, salt, and pepper. Simmer 15 minutes until thick.

Make béchamel: Melt butter, whisk in flour 1 minute. Gradually add milk, whisking constantly. Cook until thick. Off heat, stir in egg yolks and half the Parmesan.

Spread half the pasta in a greased 9x13 baking dish. Top with all the meat sauce, then remaining pasta.

Pour béchamel evenly over the top. Sprinkle with remaining Parmesan.

Bake at 375°F for 35-40 minutes until golden brown and bubbling.
