- 11 lb ground pork or chicken
- 24 cloves garlic, minced
- 34-6 Thai bird's eye chilies, minced
- 41 cup Thai holy basil leaves
- 52 tbsp oyster sauce
- 61 tbsp fish sauce
- 71 tbsp soy sauce
- 81 tsp sugar
- 92 tbsp vegetable oil
- 101 fried egg per serving
- 11Jasmine rice for serving
Instructions

Heat oil in a wok over high heat until smoking.

Add garlic and chilies, stir-fry for 15 seconds.

Add ground meat. Spread it in a thin layer and let it sear without stirring for 1 minute. Then break up and stir-fry until cooked through, about 3 minutes.

Add oyster sauce, fish sauce, soy sauce, and sugar. Toss to coat evenly.

Remove from heat. Toss in holy basil leaves — they'll wilt in the residual heat.

Fry eggs separately in oil until edges are crispy and lacy but yolks are still runny.

Serve over jasmine rice with the fried egg on top. Break the yolk into the meat — that's the move.
