- 11 lb bitter leaves (or spinach as substitute)
- 21 lb shrimp, peeled
- 31 cup raw peanuts, roasted and ground
- 41 lb beef, cubed and boiled tender
- 51 large onion, diced
- 62 cloves garlic, minced
- 72 tbsp palm oil
- 81 scotch bonnet pepper
- 91 beef bouillon cube
- 10Salt to taste
- 11Plantains or rice for serving

If using bitter leaves, wash and boil three times, changing water each time, to remove bitterness. If using spinach, just wilt briefly.

Boil beef cubes with bouillon cube until tender, about 30 minutes. Reserve broth.

Heat palm oil in a large pot. Sauté onion and garlic until soft.

Add ground peanuts and 1 cup of beef broth. Stir well and simmer for 10 minutes until creamy.

Add the prepared leaves and stir. Add scotch bonnet pepper whole (for flavor, not heat — remove later if you don't want it too spicy).

Add cooked beef and shrimp. Simmer for 10 minutes until shrimp are pink.

Adjust salt. Serve with boiled plantains, rice, or bobolo.
