- 11 lb beef sirloin, cut into thick strips
- 21 large red onion, cut into thick wedges
- 32 medium tomatoes, cut into wedges
- 41 aji amarillo pepper, sliced (or 1 jalapeño)
- 53 cloves garlic, minced
- 63 tbsp soy sauce
- 72 tbsp red wine vinegar
- 81 tbsp vegetable oil
- 9French fries (freshly fried or frozen)
- 10Cooked white rice
- 11Fresh cilantro
- 12Salt and pepper

Season beef strips with salt and pepper. Heat oil in a wok or large skillet over the highest heat possible.

Sear beef in a single layer for 1-2 minutes without moving. Flip and sear the other side. Remove while still medium-rare.

In the same screaming hot pan, add onion wedges. Stir-fry 1 minute until slightly charred but still crunchy.

Add garlic and aji amarillo, stir 30 seconds. Add tomato wedges, toss for 30 seconds.

Return beef to the pan. Add soy sauce and vinegar. Toss everything together for 30 seconds.

Toss in hot French fries at the last second.

Serve immediately with white rice on the side. The fries go IN the stir-fry, not next to it — this is Peruvian-Chinese fusion at its best.
