- 12 cups flour
- 21/2 tsp yeast
- 31/2 cup warm water
- 41 tsp salt
- 51 tbsp olive oil
- 61/2 lb ground lamb
- 71 small onion, very finely diced
- 81 tomato, very finely diced
- 91 red bell pepper, very finely diced
- 102 tbsp tomato paste
- 111 tsp Aleppo pepper
- 121/2 tsp cumin
- 13Fresh parsley, lemon wedges, and sumac onion for serving

Mix flour, yeast, salt, oil, and warm water into a smooth dough. Knead 5 minutes. Rest covered 30 minutes.

Mix lamb, onion, tomato, bell pepper, tomato paste, Aleppo pepper, cumin, and salt into a spreadable meat mixture.

Preheat oven to 500°F (or as high as it goes) with a baking sheet or pizza stone inside.

Divide dough into 6 balls. Roll each paper-thin into an oval about 10 inches long.

Spread a thin layer of meat mixture over each, right to the edges.

Bake directly on the hot baking sheet for 5-7 minutes until edges are crispy and meat is cooked.

Squeeze fresh lemon juice over the top, add parsley and sumac onion. Roll up and eat with your hands.
