    Make syrup: Boil sugar and water for 10 minutes until slightly thick. Add lemon juice and rose water. Let cool completely.

    Separate and loosen the kataifi dough with your hands. Toss with melted butter until all strands are coated.

    Press half the buttered dough into a 10-inch round baking pan, pressing firmly to create a crust.

    Mix mozzarella and ricotta. Spread evenly over the dough layer.
