- 11 lb kataifi (shredded phyllo dough)
- 21 cup butter, melted
- 32 cups mozzarella, shredded
- 41 cup ricotta cheese
- 51.5 cups sugar
- 61 cup water
- 71 tbsp lemon juice
- 81 tbsp rose water
- 9Crushed pistachios for garnish

Make syrup: Boil sugar and water for 10 minutes until slightly thick. Add lemon juice and rose water. Let cool completely.

Separate and loosen the kataifi dough with your hands. Toss with melted butter until all strands are coated.

Press half the buttered dough into a 10-inch round baking pan, pressing firmly to create a crust.

Mix mozzarella and ricotta. Spread evenly over the dough layer.

Top with remaining kataifi dough, pressing down gently.

Bake at 375°F for 30-35 minutes until deep golden and crispy on top.

Immediately pour cold syrup over the hot kunafa. Let it soak for 5 minutes. Invert onto a platter, sprinkle with crushed pistachios. Serve warm — the cheese should stretch when you pull it apart.
