- 11.5 lbs chicken thighs, cut into 1-inch strips
- 22 tbsp soy sauce
- 31 tbsp curry powder
- 41 tbsp brown sugar
- 52 cloves garlic, minced
- 61 tbsp vegetable oil
- 7Wooden skewers, soaked
- 81/2 cup peanut butter (smooth)
- 92 tbsp soy sauce
- 101 tbsp lime juice
- 111 tbsp sweet chili sauce
- 121/4 cup coconut milk

Marinate chicken strips in 2 tbsp soy sauce, curry powder, brown sugar, garlic, and oil for at least 30 minutes.

Make peanut sauce: Whisk together peanut butter, 2 tbsp soy sauce, lime juice, sweet chili sauce, coconut milk, and garlic until smooth. Add warm water to thin if needed.

Thread marinated chicken strips onto soaked wooden skewers in a zigzag pattern.

Preheat grill or grill pan to medium-high heat.

Grill satay skewers for 3-4 minutes per side until charred and cooked through.

Warm the peanut sauce gently in a small pot (don't boil).
