- 12 cups all-purpose flour
- 24 tbsp vegetable oil, plus more for frying
- 31/2 tsp salt
- 41/2 cup cold water
- 53 medium potatoes, boiled and mashed
- 61/2 cup green peas
- 71 tsp cumin seeds
- 81 green chili, minced
- 91 tsp garam masala
- 101 tsp ground coriander
- 111/2 tsp amchur (dry mango powder) or lemon juice
- 12Fresh cilantro, chopped

Make the dough: Mix flour, salt, and 4 tbsp oil until crumbly. Gradually add cold water and knead into a firm, smooth dough. Rest covered for 20 minutes.

For the filling: Heat 1 tbsp oil, add cumin seeds and let them splutter. Add green chili, peas, and cook 2 minutes.

Add mashed potatoes, garam masala, coriander, amchur, cilantro, and salt. Mix well and let cool.

Divide dough into 8 balls. Roll each into an oval, cut in half. Form each half into a cone, sealing the edge with water.

Fill each cone with 2 tbsp potato filling. Seal the top edge firmly with water and press with a fork.

Heat oil to 325°F (not too hot — samosas need to cook through). Fry 3-4 at a time for 6-8 minutes, turning occasionally, until deep golden and crispy.

Drain on paper towels. Serve hot with tamarind chutney or green mint chutney.
