- 14 medium potatoes, boiled and mashed
- 21 cup cauliflower, finely chopped
- 31/2 cup green peas
- 41 large onion, finely diced
- 52 medium tomatoes, diced
- 61 bell pepper, finely diced
- 73 tbsp butter
- 82 tbsp pav bhaji masala
- 91/2 tsp turmeric
- 101 tsp chili powder
- 116 soft bread rolls (pav)
- 12Lemon wedges and chopped onion for serving

Boil cauliflower and peas until tender, about 8 minutes. Drain and mash roughly.

Heat 2 tbsp butter in a large pan. Add onion and cook until soft, 4-5 minutes. Add bell pepper and cook 2 more minutes.

Add tomatoes and cook until mushy, about 5 minutes.

Add pav bhaji masala, turmeric, chili powder, and salt. Stir well.

Add mashed potatoes, cauliflower, and peas. Mix everything together, adding water to reach a thick but scoopable consistency. Mash and stir vigorously for 5-8 minutes.

Simmer on low for 10 minutes, stirring occasionally. Top with a pat of butter.

Slit pav rolls and toast them on a buttered griddle until golden. Serve bhaji topped with butter, chopped onion, and lemon wedge alongside toasted pav.
