- 13 cups day-old cooked rice
- 22 eggs
- 32 chicken breasts, diced small
- 43 tbsp kecap manis (sweet soy sauce)
- 51 tbsp soy sauce
- 62 tbsp vegetable oil
- 73 shallots, thinly sliced
- 83 cloves garlic, minced
- 91-2 red chilies, sliced
- 101 tsp shrimp paste (optional)
- 11Sliced cucumber and fried shallots for garnish

Heat 1 tbsp oil in a wok over high heat. Scramble eggs quickly, break into small pieces, and remove.

Add remaining oil. Stir-fry shallots, garlic, and chilies for 1 minute.

Add diced chicken and cook until no longer pink, about 3-4 minutes.

Add shrimp paste (if using) and stir for 30 seconds.

Add day-old rice, breaking up any clumps. Stir-fry on high heat for 3-4 minutes.

Add kecap manis and soy sauce. Toss everything together until rice is evenly coated and slightly charred.

Return scrambled eggs, toss once more. Serve topped with a fried egg, sliced cucumber, and crispy fried shallots.
