- 11 lb ground lamb
- 21 small onion, grated and squeezed dry
- 33 cloves garlic, minced
- 41/4 cup fresh parsley, finely chopped
- 51 tsp cumin
- 61 tsp ground coriander
- 71/2 tsp cinnamon
- 81/2 tsp allspice
- 91/4 tsp cayenne
- 10Salt and pepper to taste
- 11Metal or soaked wooden skewers
- 12Flatbread, yogurt sauce, and salad for serving

In a large bowl, combine ground lamb, grated onion, garlic, parsley, cumin, coriander, cinnamon, allspice, cayenne, salt, and pepper.

Knead the mixture for 2 minutes until everything is well combined and slightly sticky.

Divide into 8 portions. Shape each around a skewer into a long sausage shape, about 4-5 inches long.

Preheat grill or grill pan to medium-high heat. Brush grates with oil.

Grill kofta for 3-4 minutes per side (8-10 minutes total) until nicely charred and cooked through.
