- 12 large pita breads, torn into pieces
- 22 tbsp olive oil for frying
- 31 head romaine lettuce, chopped
- 42 medium tomatoes, diced
- 51 English cucumber, diced
- 65 radishes, thinly sliced
- 73 green onions, sliced
- 81/2 cup fresh mint leaves
- 91/2 cup fresh parsley
- 103 tbsp olive oil
- 113 tbsp lemon juice
- 121 tbsp sumac
- 131 clove garlic, minced

Fry torn pita pieces in 2 tbsp olive oil until golden and crispy, about 3-4 minutes. Drain on paper towels and sprinkle with a little sumac.

In a large bowl, combine chopped lettuce, tomatoes, cucumber, radishes, green onions, mint, and parsley.

Make the dressing: Whisk together 3 tbsp olive oil, lemon juice, sumac, minced garlic, salt, and pepper.

Pour dressing over the salad and toss well.

Add the crispy pita chips just before serving so they stay crunchy.
