- 12 lbs pork shoulder or butt, cut into 2-inch thick strips
- 23 tbsp hoisin sauce
- 32 tbsp soy sauce
- 42 tbsp honey
- 51 tbsp oyster sauce
- 61 tbsp Shaoxing wine
- 71 tsp five-spice powder
- 82 cloves garlic, minced
- 9Red food coloring (optional, for color)
Instructions

Mix hoisin, soy sauce, honey, oyster sauce, Shaoxing wine, five-spice, and garlic into a marinade.

Coat pork strips in the marinade. Cover and refrigerate for at least 4 hours, ideally overnight.

Preheat oven to 475°F. Line a baking sheet with foil and place a wire rack on top.

Arrange pork strips on the rack, reserving the marinade. Roast for 15 minutes.

Flip pork and baste with reserved marinade. Roast another 10 minutes.

Baste once more and broil on high for 3-5 minutes until edges are charred and caramelized. Watch carefully — it can burn fast.

Rest for 5 minutes, then slice against the grain. Drizzle any remaining pan juices on top. Serve with rice or in bao buns.
